CUVEE MATISSE - Harvests 2017 & 2018
Cellared : february 2019
BLEND: 60% Chardonnay - 18% Pinot Noir - 22% Pinot Meunier
Appearance : A luminous pale gold color with delicate green reflections. The effervescence is fine and steady, forming a continuous stream of tiny bubbles that gather into a refined bead at the surface.
Nose : Aromatic and expressive, the bouquet reveals notes of dried flowers harmoniously blended with white-fleshed fruits such as pear and peach. The dark grape varieties add their signature fruitiness, giving this cuvée balance and complexity.
Palate : The attack is clean and fresh, supported by a well-judged sugar dosage of around 7g per bottle that maintains excellent balance.
The finesse of Chardonnay shines through, while Pinot Noir and Meunier lend structure and depth.
Flavors of dried flowers and citrus notes emerge gently, offering both delicacy and roundness.
Finish :
Long, elegant, and vibrant, the finish recalls all the aromatic qualities of the wine, leaving a lingering impression of intense lemon zest.
Food Pairing :
A Champagne for every occasion — perfect as an aperitif among friends or for an intimate tête-à-tête. It pairs beautifully with refined dishes such as sea bass, red mullet, lobster, oysters in aspic, wild rabbit with chanterelles, or roast poularde.
